Folonari has been a synonym for fine Italian wine since 1825. the finest grapes are selected in order to generate perfumes and flavours that only the most representative wines of the Italian tradition are capable of offering. Distributed all over the world, Folonari fully exploits the riches of its past and harmonizes it with the demands of a new market while remaining attentive to quality and novelty.
The grapes: 100% pinot grigio.
The vineyard: Vines selected along the valley of the Adige which flows through the Trentino and Veneto regions on stony alluvial soils with good drainage, at an altitude of about 200 metres. The vine, trained using the simple pergola system with southern exposure, provides 12 tonnes per hectare.
Vinification: The grapes, cultivated during the last ten days of August, are vinified off the skins and the musts are first clarified by static cold decantation which is more respectful of their aromatic potential. Fermentation takes place with selected yeasts at 16-18°C. The new wine is aged for an adequate period in steel until ready for bottling.
Analytical data: Alcohol 11.5%; total acidity 5.50 g/l; pH 3.25; sugars 4.5 g/l; extract 21g/l.
Ideal conservation: 1 year in bottles on their sides in a cool dark environment.
Food pairings: Hors d'oeuvres, starters, fish and cold white meats.
Serving temperature: 10-12°C.
Tasting Note: The colour is straw yellow while the distinct meadow-flower perfume recalls honey and banana. On the palate it is dry without excesses, full and smooth but fresh and lively, with an attractive aftertaste of justly lingering ripe pear.
