The West Winds Sabre is a uniquely Australian take on a traditional London Dry style gin. The flavours in this bright, aromatic gin are led by an undercurrent of citrus with a dominance of juniper, followed by the classic coriander seed. The addition of wattle seed adds a depth to the mid palate and introduces a creamy texture to the gin. Perfect as a classic G&T with lemon to release the intricacies of this uniquely styled gin.

THE SABRE G&T

  1. Pour a healthy measure (30ml-ish) of The Sabre into glass
  2. Add 5 measures of tonic
  3. Add ice to chill it down
  4. Garnish with the zesty slice of lemon.

Tasting Note: Unashamedly classic, it is the Australian expression of a traditional gin, incorporating a strong undercurrent of citrus weaving through twelve spices and botanicals including juniper, lemon myrtle, lime peel and wattle seed.
