Great Southern Distillery, the first of its kind in Western Australia is located in the picturesque coastal town of Albany. Great Southern's whisky is marketed as 'Limeburners', named after an area nearby the distillery where lime burning took place in convict times. The present distiller is Albany local, Ben Kagi who joined the company in 2005, putting to work a palate honed over many years as a winemaker and associate judge in wine shows. After initially looking after quality control, he's now the main distiller, instrumental in setting the standards for the award winning Limeburners Single Malt and Whisky Liqueur.
Great Southern are a boutique distillery producing premium quality single malt whisky using time honoured techniques and traditional copper pot stills. Each batch is produced and bottled by hand. By world standards they are a tiny operation, which is how they like it keeping their focus on quality stating quantity is irrelevant.
The Sherry Cask is a complex and elegant single malt whisky distilled in traditional small batch copper pot stills from local barley. This whisky is matured in second fill bourbon barrels and finished in a very old small sherry cask.
Tasting Note: Medium coloured whisky. Intense, complex flavours, full taste and smooth finish. Exhibiting spice and fruit aromas when neat, a splash of water unleashes malted barley, aromas of sherry and vanilla with hints of honey, raisins and buttery caramel.
