Cascabel Couloir Roussanne Viognier is a fresh and personality driven white wine from McLaren Vale. A small and independent vineyard with a distinctly Spanish heritage. Cascabel, which is a small bell used in Spanish celebrations and is synonymous with festivity, liveliness and charm – embodies what its namesake represents, fresh and lively wines with plenty of personality. Cascabel handles every step of the winemaking process, from crushing through to bottling.
The Couloir is made from Roussanne and Viognier varietals, both of which grow adjacent one another in the vineyard about the couloir (steep gully) that runs through the property. The grapes are picked slightly early to retain fresher flavours and higher acid and by blending them, the aim is to produce a wine with greater personality and character than either of its components alone.
Tasting Note: Hints of grapefruit and honeysuckle on the nose. Citrus, apple and pear spectrum on the palate, with a hint of cinnamon and a vibrant finish.
