Originally created in 1862, Bacardi 8YO (Ocho) was originally the exclusive party rum of the Bacardi family for over 130 years and still only exists in very limited stock today. When crafting this rum, the Maestros De Ron Bacardi age the rum in American Oak barrels which develop the oak, vanilla, caramel, spice and dried fruit notes and its distinctive smoothness. The rums used to blend Ocho are matured for a minimum of 8 years under the intense heat of the Caribbean sun. This tropical climate rapidly accelerates the ageing process, especially the evaporation, known as the angels share. This allows the complexity and smoothness of the rum to develop much quicker than spirits aged in cooler climates.
Ocho makes a great rum old fashioned or is perfect simply poured over ice.
Tasting Note: Notes of prunes, apricots, nutmeg and vanilla over a clean woody background of oak. Smooth, rich and very full taste with a long and expansive finish.
